THE RECIPE: TJ'S SUPERFOOD ACAI BOWL

WHAT YOU'LL NEED

  • 3/4 Cup coconut water (make sure it's unsweetened; I like the Zico or C20 brands)

  • 1 packet Trader Joe's frozen (unsweetened) acai puree (SUPS excited they started carrying this because the brand I used to love started adding soy lecithin and I'm just not a fan of unnecessary food additives.)
  • 3/4 Cup frozen mixed berries ( I recommend buying organic berries. Check out this super helpful FAQ re: produce & pesticides to learn why.)
  • 1/4 C Trader Joe's frozen riced cauliflower
  • 1 tablespoon organic or no sugar added Sunbutter, or sub Trader Joe's sunflower seed butter (I LOVE the unique, nutty flavor of sunflower seed butter and its an excellent alternative for those with nut allergies. Don't have it or don't like it? No problem. Use any nut butter you like!)
  • 1 Scoop Nuzest chocolate protein powder (This is my preferred brand after testing ENDLESS clean, plant-based proteins and choking on most of them.)
  • 2 Tablespoons collagen peptides (Use code MISFITWELLNESS10 to purchase my current fave, Further Food collagen here.)
  • Small handful organic spinach (Also recommend organic spinach. I'm a firm believer in "do the best you can" when it comes to organic due to cost and availability. I use this super helpful FAQ re: produce & pesticides to help me decide where to splurge and where to save.)

  • Another NOTE: I mention brands because these are my personal favorites after about 5 years of experimentation, research and/or because of price/availability. Nourishment matters a hell of a lot more than brands, so don't let my brand notes get in the way! Make the best of what you have to make healthy meals happen. If you're looking for recommendations, great, I got you. 
 

OPTIONAL ADDS/TOPPERS

  • 1/4 Cup frozen mixed berries
  • 1 teaspoon whole chia seeds
  • 1 teaspoon hemp hearts
  • 1 teaspoon slivered almonds

DIRECTIONS

  1. Chill a bowl in the freezer
  2. Add the ingredients from the "what you'll need" list to your high-speed blender, making sure you add liquid first. (If you don't have a high speed blender, keep liquid handy as you'll likely need it!)
  3. Blend on high until completely smooth. If your blender struggles with all the frozen goodness, no worries. Use the tamper (for you Vitamix users out there,) OR TURN OFF your blender before scraping down the sides, popping any air bubbles, then adding a little more liquid to get things moving. 
  4. Pour into your chilled bowl and top with toppers of your choice! (You can see what I chose above.)
